Stuffed Tomatoes!

What a time to eat tomatoes! Check out this delicious recipe: Stuffed Tomatoes!

  • You will need:

tomatoes, onions, olive oil, shredded coconut, salt, chilli powder, turmeric, garam masala, cilantro, mustards seeds, hing powder.


  • Instructions:

Cut plum tomatoes in half horizontally, partially scoop out the inside and set aside. In a bowl add finely diced onion, unsweetened shredded coconut, a small pinch of salt, chilli powder, ground turmeric, garam masala, chopped fresh cilantro (leave some for garnish) and mix well. Fill the hallowed tomatoes with the stuffing. Heat olive oil in a pan over medium to high heat, add mustard seeds and allow them to splutter. Add hing powder and lower the heat. Carefully place the stuffed tomatoes in the pan facing the stuffed side up. Cook covered on medium heat for 5 to 7 minutes or until you can easily cut through each one with a fork. Garnish with remaining cilantro and enjoy!
